The 5th day of #7Recipes7Days. I made this recipe from using up some ingredients I had in the house, and it turned out to be absolutely delicious, so I decided to share it. It uses blood oranges (which are on sale at Aldi now!) and passion fruit, which might be a little tricky to get hold of, but if you can then do – they are so flavourful an colourful, and can be used in so many ways apart from this recipe. That said, they are delicious in this one too – here’s how you make it:
Ingredients (serves 1):
1 blood orange
1 passion fruit
4 heaped tbsp yoghurt
Small handful of granola
Drizzle of honey
Method:
Using a knife, peel the orange downwards, making sure you remove the skin and the white pith. Be careful so as not to take too much of the flesh away. Continue to peel until you have a sphere of orange flesh.
You will see white pith going around the orange, running down from top to bottom. Carefully, cut either side of these white lines through to the middle, and then pop the orange segments out. You should be left with small orange segments with no pith at all.
Spoon the yoghurt into a bowl. Drop the orange segments around the yoghurt.
Slice the passion fruit in half, and scoop out the seeds out, scattering around the yoghurt. Sprinkle the granola on top, drizzle with honey and serve.
