'Rhubarb Leaf' cocktail

I’ve not done many recipes for drinks on here, and I’m really not sure why. They can be a great palate-cleanser, after-dinner digestif or can complement and enhance the food you’re eating. If you would like to see some more recipes for cocktails, mocktails and perhaps some reviews of other drinks, beer/gin/wine etc. then let me know. I’d be only to happy to get to work on the market research…


This recipe is not my own, but is so good I thought I should share it with you. It’s originally from a book called ‘Good things to drink’ by Mr. Lyan (aka Ryan Chetiyawardana). The book is absolutely brilliant, with some awesome and inspiring recipes, and stunning photography. If nothing else, the pictures will make you want to drop everything, move to New York, find a cool bunch of friends and drink amazing drinks forever. It also really makes you think about what you’re drinking. The ‘less and better’ adage definately applies, with some absolutely brilliant infusions and mixes. This recipe is from that book – here’s how to make it.


Ingredients (Makes 1 cocktail):

  • 1 long stick of rhubarb

  • 250g sugar

  • 150ml water

  • 50ml (2 shots) of gin

  • Juice from 1/2 lemon

  • 1 egg white

  • 2 raspberries

  • Lots of ice

Equipment needed

  • Cocktail shaker

  • Fine Strainer (or sieve)

  • Martini/Coupette glass

Method:

  1. To make the rhubarb syrup, chop off the ends of the rhubarb stick, and chop roughly into inch pieces. Place the rhubarb in a saucepan on a medium heat. Add in the sugar and water, bring to the boil, and simmer for 15 mins or so, or until it has become one, stringy mixture.

  2. Pour the syrup through a sieve, and push through the liquid. Set the strained liquid aside.

  3. Fill the martini glass with ice and water to chill the glass

  4. Fill the shaker with ice, then add 1 shot (25ml) of rhubarb syrup, lemon juice, gin, egg white and 1 raspberry into the shaker. Put the lid on, and sake vigorously, channeling your inner Tom Cruise.

  5. Tip away the ice and water from your glass.

  6. Pop the lid off your shaker, pour the mixture into your chilled glass through the fine strainer. Garnish with a raspberry that is cut in half.
